Firstlight Wagyu Beef Scotch Fillet - Wagyu Beef Recipe


Ingredients: - Wagyu Beef Recipe
  • 800g scotch fillet
  • 320g baby beetroot
  • 300g cauliflower
  • 80g butter
  • salt & pepper to taste
  • 50g Rocket
  • 120g bone marrow
  • 100g flour
  • 1 egg
  • 100g panko bread crumbs
  • 50g fresh horseradish
  • 200ml cream 200ml milk
  • 50g shallots
  • 2g agar


Method: Wagyu Beef Recipe
  1. Trim and roll the beef & chill until required
  2. Boil the beetroot in salted water until tender then remove the skin while still warm, cool in ice water until required.
  3. For the custard, heat a little oil in a pot, sweat the shallot and grated horseradish, add the cream and milk, gently simmer and reduce by half, add the agar and process with a hand blender. Pass through a fine sieve and pour into dariole moulds to set. Turn out when serving onto the plate. Wagyu Beef Recipe
  4. Smoke the bone marrow which has been cut into 1 inch pieces for 20 minutes, cool and remove the marrow from the bone. Coat in flower, egg and panko and deep fry in Wagyu fat to serve.
  5. Boil the cauliflower until tender, place in a food processor, add the butter while blending and season to taste. Wagyu Beef Recipe
